Holiday Pupovers


This Thanksgiving, you and your pup can both give thanks for these healthy, dairy and gluten-free morsels (heck, they're even paleo!) that won't add any more starch or sugar to the mix. With only a few simple ingredients—most of which are found in Evermore—these little nutritional powerhouses not only make a great side dish should you treat your pup to some turkey (always meat, never fat) but also a delicious snack for you to share. While not technically popovers, the texture and flavor remind of us them, and we couldn't resist the name. :)

Holiday Pupovers (gluten/peanut/dairy-free/paleo)

Yield: 24 to 36 mini popovers, depending on how full they are filled

Ingredients

2 eggs

1/2 cup pureed pumpkin

1 1/2 pumpkin seeds

1-2 tablespoons coconut or olive oil 1 cup grated apple w/ skin (about 2 small) 2 teaspoons baking powder 1/2 t honey (optional)

Preparation

Combine pumpkin seeds and oil in a food processor or blender and process for 3-5 minutes, stopping occasionally to scrape down sides, until smooth and creamy. Add more oil as needed if mixture looks dry. Even if the consistency is not totally smooth or spreadable, it will still work well in the recipe.

Preheat oven to 350°F. Grease muffin pan with coconut oil (even if your pan is silicone, they will be much easier to pop out later). Mix all ingredients together until smooth. Fill muffin pan with batter to 2/3 full. Bake for 15-20 minutes, or until golden and a toothpick comes out clean. Let cool for a couple minutes, and then slide out of baking pan. Let cool.
